Slow Cooker – Lemon Curd Sponge Pudding

Ingredients
- 2 Eggs
- Butter
- Caster Sugar
- Self-Raising Flour
- 5 drops of lemon extract
- 4 tbsp Lemon Curd
Butter, Sugar and Self-Raising Flour, each have to be the same weight as the eggs.
Method
- Grease Pyrex basin.
- Put the lemon curd in the bottom of the bowl.
- Beat together remaining ingredients.
- Put cake batter on top of the lemon curd.
- Cover the top of the bowl with foil.
- Put in the slow cooker.
- Add boiling water to the slow cooker 1/3 of the way up the bowl.
- Under the lid of the slow cooker put a tea towel.
- Cook on high for 2 hours.

Review
I really enjoyed this recipe. It was easy to make. Next time I think I would try golden syrup instead of lemon curd as I think it will work well.
