Slow Cooker – Lemon Curd Sponge Pudding

Ingredients

  • 2 Eggs
  • Butter
  • Caster Sugar
  • Self-Raising Flour
  • 5 drops of lemon extract
  • 4 tbsp Lemon Curd

Butter, Sugar and Self-Raising Flour, each have to be the same weight as the eggs.

Method

  1. Grease Pyrex basin.
  2. Put the lemon curd in the bottom of the bowl.
  3. Beat together remaining ingredients.
  4. Put cake batter on top of the lemon curd.
  5. Cover the top of the bowl with foil.
  6. Put in the slow cooker.
  7. Add boiling water to the slow cooker 1/3 of the way up the bowl.
  8. Under the lid of the slow cooker put a tea towel.
  9. Cook on high for 2 hours.

Review

I really enjoyed this recipe. It was easy to make. Next time I think I would try golden syrup instead of lemon curd as I think it will work well.
